Recently I discovered an amazing new addition to my “regular” pea soup. I’m not sure if you’ve ever had lentils in your pea soup but it’s actually delicious. In case you haven’t tried my pea soup recipe, I really have to tell you that it’s delicious. I start with 1 cup butternut squash and add 1 1/2 cups of organic peas. These are steamed (not boiled) slightly and then I add raw, organic lime juice. These are mixed while you prepare 1 cup of lentils. Once they are done cooking, you add the lentils to the pea soup and stir with a wooden spoon. After cooling slightly, it’s ready to serve and absolutely delicious!
1 cup of water
1 1/2 cup organic peas
1 cup organic lentils
Boil the lentils in the water for approximately 35 minutes
Mix the organic peas and butternut quash together and steam until soft. Squeeze 2 fresh, organic limes and add the juice to the peas and squash. Drain the lentils and add to the peas stirring with a wooden spoon.
Add fresh parsley or cilantro for taste.
